The government agency’s full statement reads: “Washing poultry before cooking is not recommended. Bacteria in raw meat and poultry juices can spread to other foods, utensils and surfaces. We call this cross-contamination. Some consumers think that they are removing the bacteria and making their meat or poultry safe through washing. However, some of the bacteria are so strongly attached that you cannot remove them no matter how many times you wash them.”

The USDA continued: “But there are other types of bacteria that can easily be washed off and splashed onto your kitchen surfaces. Failure to clean these contaminated areas can lead to foodborne illness. Cooking (baking, boiling, broiling, and (grilling) at the right temperature kills bacteria, so washing the food is not necessary. Using a food thermometer is the only sure way to know if your food has reached a high enough temperature to destroy the bacteria that come from food.”
